Ingredients

  • 8 ounce mascarpone cheese
  • 1 cup(s) sugar
  • 1 cup(s) heavy cream (whipped)
  • 1 tablespoon lemon juice
  • 1 box strawberried (sliced)
  • 2 box frozen mini tartlet shells

Directions

Mix the cheese, sugar and lemon juice together until blended and smooth.

Whip the heavy cream in a separate bowl until stiff peaks form.

Add whipped cream to the cheese and sugar mixture and gently fold together until smooth.

Prepare the tartlet shells (If prebaked, just thaw them out a bit, otherwise bake according to directions on the box)

Spoon cheese mixture into a large plastic bag. Cut one corner of the bag to pipe the mixture more easily into the tartlet shells. fill about 3/4 of the way up

Add sliced strawberries (raspberries are also really good) on top.

Note: This recipe can be modified to be low carb simply by exchanging Splenda for the sugar. It tastes the same.
